Ingredients

  • 10 tacos (hard)

  • 1lb ground turkey

  • 1 medium yellow onion

  • 1 poblano pepper

  • 3/4 c of taco seasoning

  • 1/4 c of water

  • 1 cup shredded mexican cheese

  • taco sauce (as much as desired)

  • 1-2 hot pepper of choice (optional)

Directions

  • Pre-heat oven to 400

  • chop onions and poblano peppers

  • add a drizzle of oil to a pan set to medium high and cook onions and peppers until soften (<10 minutes).

  • Once vegetables are done, add salt and pepper then remove from pan (they will be added back once meat is cooked)

  • add a drizzle of oil to pan set to medium high and cook meat until cooked through; be sure to break up the meat as it cookies; drain excess oil

  • add vegetables back into pan and combine; mix in taco seasoning and water; cook until desired saucyness; remove from heat

  • arrange taco shells into a baking dish; add meat filling, any hot peppers, and cover with cheese

  • cook in middle rack for around 10 minutes (cheese should be melty)

  • plate tacos and add as much taco sauce as desired
